I haven't done much of the interior LED conversion so I'll let the others fill you in on that. I know some have already completely converted their lights in LEDs.

As for the fog lights, yes the bulbs are H11. However, be warned that the fog lights are multi-reflector so the HID bulbs aren't that great in them. They don't throw the light too well, at least in my car. I'm going to replace the bulbs with Morimotos to see if they improve.
If you want brightness, then a HID kit will be good, but for actual light throw, a halogen H11 or even a LED conversion H11 is better.

How did those work out? Do they illuminate the entire diffuser/cover evenly, or are there hot spots?

Pretty evenly in the front dome. FANTASTIC in the trunk. In the courtesy lights, you might be better with a more unidirectional design since there is no reflector behind

Yes, this is the kind of LED conversion kit you'd want for the fog lights. I bought something similar for my DRL/High beam from VLEDS.com. It's more expensive, but more reputable and they have a decent reputation with customer service.

Keep in mind about what color you want to have in the fog lights. Some people like to match their low beams and others like a yellow beam for the fog lights (like mine).

I'd go with a LED conversion kit over a HID for the fogs. I only have HID fogs because the previous owner put them in.
People in other forums say that LED kits are brighter than halogen bulbs but not as bright as HIDs. However, LEDs work well in multi-reflector housings and not so well in projectors. The opposite is true for HIDs.
