esp off switch
ESP is normally on by default. No light should be on. You can deactivate it by pressing the button for a few seconds and then the light will come on. It will go back to ON when you turn off the car and start up again. If it is staying on in RED I think that may indicate a problem.

Speaking of ESP...did anyone notice our traction control system with the ESP is soooo lazy? Every time it rains, if I accelerate a bit quicker and lose traction, it lets me peal off the tyres for a while before it decides to kick in and cut back the power...does this happen to anyone else?

Sound like a good system then. It might actually brake the spinning wheel to redirect torque to the wheel with traction; then if that doesn't work, start reducing engine power?
I had a Mondeo ST24 (many years ago) that did that. It could get off the line quickly (for a FWD) as the system acted like a limited slip diff.

Nothing like that here.
Have you had any service that involves taking off the wheels recently? Brakes, tire balance, struts, etc? The reason I ask is that this light will turn on a lot of times when a sensor has gone bad or has been broken by careless technicians.
